Ingredients
1 pk active dry yeast
2 t sugar
1 c 110° F water
1/4 c shortening
3 1/2 c unbleached, all-purpose flour, wheat
2 t salt
16 oz mozzarella slices
2 cn pizza sauce 14 oz tomato sauce


Directions
Basic Pizza Dough: 
1 package active dry yeast 
2 teaspoons sugar 
1 cup warm water (110° F) 
1/4 cup lard or vegetable shortening 
3 to 4 cups all-purpose flour 
2 teaspoons salt 
Olive oil 

Dough Prep:

1) Preheat oven to 500° F and place a pizza stone on the bottom rack of the oven
2) In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste
3) Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook
4) Remove the dough from the bowl
5) Grease the bowl with olive oil and place the dough back in the bowl
6) Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour
7) Turn the dough out onto a floured surface and divide dough in half
8) Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes
9) When the dough is not tough and somewhat fluffy, the dough is ready to be shaped

Yield: dough for 2 (16-18 inch) pizzas

Pizza Assembly and Baking:

1) Each ball of dough should roll into a 16-18 inch circle, about 1/4-inch thick
2) Dust pizza peel or baking sheet with cornmeal - If baking sheet, spray with Pam or spread butter on surface before dusting with cornmeal
3) Place rolled out dough on peel or baking sheet
4) Spread one can of pizza sauce (or desired amount) evenly over dough, leaving a 1/2-inch border along the edges
5) Add desired, optional toppings
6) Top with 1/2-pound mozzarella slices or shredded cheddar
7) Lightly sprinkle Italian Seasoning or basil on top
8) Bake for 8-10 minutes or until cheese is bubbling and the edges are golden brown
9) Repeat with remaining ingredients to make a second pie
